Stir-Fried Chicken

We keep hearing that it's easy to prepare stir-fry dishes. You just keeping stirring the ingredients until they're cooked,... supposedly.

The thing is, what do we use to flavor the dishes ?

My mom sent me a Chinese cookbook - it's more of a pamphlet, really - and this gave us a starting point in terms of the sauce.

For this chicken-stir fry dish, we used the following:

Skinless & boneless chicken thighs, cut into strips
1 head of broccoli florets (did not know that the stem is edible so I threw it away, argh!)
1 carrot, sliced
quail eggs
2 cloves garlic
1 tsp grated ginger

sauce:
2 tbsp oyster sauce
1 tbsp lite soy sauce
1 tsp cornstarch, dissolved in 2 tbsp water
1 tsp sugar
  1. Blanch the vegetables - broccoli and carrots.
  2. In a wok, saute the garlic and the ginger in hot oil.
  3. Add the chicken and stir around until chicken in cooked.
  4. Pour in the sauce and then add the vegetables and the quail eggs.
  5. Let the sauce boil and thicken.
  6. Serve

i do something similar, but with fish fillet and tofu, instead of chicken. slice the fish into 2x1 inch pieces/ season with salt and pepper, dredge in flour and shallow fry. cut the tofu into squares and fry as well. set aside.

toss the vegetables in a small bit of oil to coat(this eliminates blanching). saute minced garlic, ginger strips. add the veggies (i like adding mushrooms and young corn). add the fish and tofu. add a cup or so of water and season with soy/oyster sauce, salt, if needed and black pepper. simmer until veggies are tender. thicken with cornstarch, dissolved in cold water. toss in some sliced leeks (white and light green parts).

a few drops of sesame oil before serving.

i guess mine is more of a fish tofu hotpot... now that i think of it. not that i cook it in a claypot as originally intended. =D how are you?

tamang tama, I have this clay pot that I haven't used pa. Mom brought it for me when she visited early this year.

hi! didn't see your comment until now. hehe will take a photo next time i make it. i don't think i have an existing photo(cooked lots of stuff, but keep forgetting the camera!). not sure if we have fish fillet right now. =D
